By default, WooCommerce variable product display like this screenshot. but if you want to display all variation as a table then you can do it easily to using our plugin Variation product Table.
For that, you need to go our plugin settings page and enable Variation Product Table. See below screenshot.
Here just enable Variation Table option. after that, you will see variations will display as a table like below screenshot.
